Position Summary:
The Pastry Chef de Partie is responsible for managing his pastry section of the kitchen, creating high-quality desserts, pastries, and other baked goods that align with Bijou’s culinary vision. The ideal candidate should have a passion for pastry arts, a profound understanding of flavor profiles, and experience in an upscale dining environment.

Key Responsibilities:
  • Be an assistant to the Executive Chef and Sous Chefs when developing innovative dessert offerings, seasonal specials, and menu changes.
  • Manage all aspects of the pastry kitchen, including inventory management, sourcing quality ingredients, and maintaining cleanliness and organization in the workspace.
  • Ensuring adherence to proper techniques and industry standards.
  • Monitor and maintain the consistency of products, ensuring that items are prepared according to recipes, specifications, and plating presentations.
  • Ensure compliance with health and safety regulations, maintaining a clean and sanitary work environment.
Qualifications:

  • Culinary degree in Pastry Arts or related field preferred.
  • Minimum of 2-3 years of experience in a pastry role, preferably in an upscale or fine dining restaurant.
  • Strong understanding of classical French pastry techniques and California cuisine.
  • Exceptional creativity and ability to develop unique dessert concepts.
  • Excellent organizational and leadership skills, with the ability to work effectively in a fast-paced environment.
  • Strong attention to detail and commitment to delivering high-quality products.
  • Knowledge of food safety and sanitation regulations.
